I got inspiration for this cake from Paul Hollywood’s recipe and Eis Greissler new ice cream flavour!
- For the cake

250g plain flour

1 tsp baking powder

125g caster sugar

1½ tbsp edible lavender

zest of 2 organic oranges, finely grated zest only

2 large eggs

200g plain, full-fat yoghurt

50g butter, melted
- 50 g sunflower oil

- For the orange drizzle
-

juice of 2 oranges, strained

2 tbsp icing sugar

- For the topping
-

1 tbsp granulated sugar
-
2 tsp edible lavender

Preheat the oven to 180 degrees C.
Mix all the dry ingredients together in a bowl and all the wet ingredients in a separate bowl.
Pour the wet ingredients onto the dry ones and mix everything using a spatula until well combined.
Pour the mixture into a cake or loaf tin (which has either been greased or with baking paper in it) and bake for about 40 minutes.
Remove from the over, let it slightly cool while you make the drizzle. Mix the the orange juice and icing sugar until well combine. Make holes in the loaf with a fork and pour the drizzle onto it. Sprinkle the granulated sugar and lavender on top.
Let the loaf cool completely in the pan. Now it’s ready to be served 🙂
